Join us for an evening of classic Italian Sauce: Bolognese! Bolognese sauce has become ubiquitous as the meat sauce for pasta all over the world. Come learn to make it how they do in Bologna, with Chef Zach Goldman. Together, we will mince, brown, simmer, and braise, building layers of flavor. The flavors of meat, wine, soffrito, and just a touch of tomato will meld together, becoming the most savory and delicious ragu you can put on pasta.
Expect plenty of hands on cooking, and a demonstration. Class will end with a sample of pasta. Andiamo!

About our Instructor:
Zach Goldman came up in New York City kitchens, working from dishwasher to chef. Looking for more out of life, he sold everything and wandered the US on a motorcycle. He landed in Portland - because it's wonderful - and he likes foraging for Oregon Chanterelle mushrooms. Besides cooking at Cookshop, he teaches private cooking lessons, consults on home kitchen renovations, and works in wineries in the Willamette Valley. He lives in Northeast with his partner, Kayleigh, and their cat, Bren.
