Knife Skills: Grazing Platter
The first thing any chef needs to know is how to correctly use the most important tool in the kitchen. This is a hands-on class, and will equip you with the skills and knowledge to be a more confident cook!
This class is perfect for beginners or anyone wishing to up their game in the kitchen. We’ll start with proper hand positioning, knife safety and caring for your tools. We’ll also talk you through what you should, and shouldn’t include in your basic knife set at home. Everyone will get lots of time to practice as we guide you through the fundamental cuts. At each of our Knife Skills classes, we’ll prep ingredients for a specific dish to snack on at the end of class. September’s class will focus on prepping produce for a grazing platter.
What to Expect:
Class includes all ingredients, recipes, tools and instruction.
Instruction via some demo and some hands-on cooking.
Plenty of sampling, plus recipes to take home.
Knives will be provided, but you are welcome to bring a knife from home that you’d like to practice with.

About our Instructor
A San Francisco native who has lived in Oregon since 2010, Luca Ponti has been helping in the kitchen since he could talk. He started cooking professionally at Veritable Quandary, a quintessential Portland restaurant, where he developed his skills ranging from osso buco to pastry. He later became Lead Baker and Kitchen Manager at Sweedeedee in North Portland. where he became known for his exuberant energy, creativity, and the best pie in the state of Oregon, according to People Magazine. He is now the owner & creator of SquirrelmealsPDX: an at-home private chef experience!
