Bean to Bar with Woodblock Chocolate

Join Woodblock Chocolate’s founder and chocolate maker, Charley Wheelock, for a chocolate filled afternoon. While the full chocolate making process takes days, we’ll hop in the Cookshop time machine and make stops at various points in the chocolate making process. From roasting to winnowing; conching and tempering, we’ll cover all the key terms and processes. We’ll examine beans that are at various stages in the process to get a sense of how flavor develops, and teach you the rather intimidating process of tempering chocolate,. Everyone will get a chance to create their own chocolate bar, and we’ll make homemade “magic shell” and use it in a chocolate sundae to top off our class!

What to expect:

  • All ingredients, tools, and recipes will be provided.

  • Class will be a mix of demo, q&a and hands on chocolate time.

  • Everyone will get to sample chocolate, and take home their own custom made bar.

  • Beer and wine available for purchase.

About our instructor:

An industrial designer by trade, Charley Wheelock wanted to start a family business that was sustainable and engaged his passion for building and crafting things by hand. After enrolling in a chocolate science class at UC Davis, Charley purchased some hobby equipment, and he and his wife, Jessica, started making loads and loads of chocolate at home. A year and a half later, they took their Woodblock Chocolate brand to market. Fast forward about 13 years, and Woodblock is now made in their manufactory in NE Portland. Passionate about all things chocolate, Charley is excited to share his knowledge and craft.
