Veggie of the Month Series: Spring Onions
Join Zach Goldman as we cook our way through the seasons! Every month, we will study new techniques and dishes featuring a star vegetable on the seasonal calendar. This month we’ll dive into spring onions, (with potential appearances by garlic scapes and spring garlic).
Together, we will make three dishes and sample them together. The class will be mostly hands-on, with a demonstration, and with an opportunity to hear from the class how you have enjoyed our star ingredient before.
What to expect:
Class will include all instruction, tools, recipes, and ingredients.
Together we will cook (and eat) at least three dishes, utilizing whatever we get from the Fox and Bear CSA.
Beer, wine and kombucha will be available for purchase.
Let us know about any dietary restrictions you have.
Class is suitable for all levels of experience.

About our Instructor:
Zach Goldman came up in New York City kitchens, working from dishwasher to chef. Looking for more out of life, he sold everything and wandered the US on a motorcycle. He landed in Portland - because it's wonderful - and he likes foraging for Oregon Chanterelle mushrooms. Besides cooking at Cookshop, he teaches private cooking lessons, consults on home kitchen renovations, and works in wineries in the Willamette Valley. He lives in Northeast with his partner, Kayleigh, and their cat, Bren.
